Takes place from October to January and it is done directly on trees by hand-stripping off.
       

UNLOADING OF PRODUCTS
During the day each owner addresses the olives in the crusher.


STORAGING
Waiting to be processed the olives are placed in special ventilated bins to allow the respiration.
       
DEFOLIATION
The preliminary phase of producing process starts: olives are put into the machine and are cleaned by leaves and branches.
WASHING
Olives are put into a tank and washed by a water and air puff. Now the real working process starts.
